It’s time for Orecchiette! The pasta symbol of Apulian gastronomy! The name comes from the shape they have, reminiscent of the shape of the ears (orecchie in Italian).
The orecchiette spread in Puglia between the twelfth and thirteenth centuries especially in Bari where they still call it "strasc'nat", literally "strascinati", due to the movement "strascinare" or rolling with your finger the pasta on a table to obtain a classic round and concave shape.

Class Description and Details
In this 1.5-hour experience, you’ll join us in the small town of Palombara Sabina. Nonna will invite you into her home, and we’ll share family traditions, stories, and create a delicious meal together using a recipe passed down through generations. See below for our favorite wine pairing suggestion, should you be so inclined! Every class provides a meal to a child in need. One Class, One Meal.

2 pinches of salt
100 gr pitted olives ( or in brine or in oil )
10 fresh basil leaves
50 grams shelled almonds
