      Class Description and Details

      In this 1.5-hour experience, you’ll join us in the small town of Palombara Sabina. Nonna will invite you into her home, and we’ll share family traditions, stories, and create a delicious meal together using a recipe passed down through generations. See below for our favorite wine pairing suggestion, should you be so inclined! Every class provides a meal to a child in need. One Class, One Meal.

      Ingredients and Utensils

      Ingredients for 2 people:

      2 eggs 

      200g of flour 00


       

      For the filling:

      5,2oz / 150g pumpkin

      1 medium boiled potato

      1 yolk

      4 tablespoons of Parmigiano cheese

      4 tablespoons of hazelnuts

      rosemary

      fine salt

      coarse salt ( for water )

      j.e Grandma's gold extra virgin olive oil

      j.b pepper ( optional )


       

      Gorgonzola / cheese cream:

      ½ cup / 100g milk

      ½ cup / 100g gorgonzola cheese ( or another soft cheese )

       

       

      Tools:

      1 pasta cutter wheel

      1 pastry board 

      1 large pot

      1 medium pan

      2 lids

      1 saucepan

      2 medium bowls

      1 rubber spatula

      1 fork

      1 tablespoon

      1 wooden spoon

      2 teaspoons

      Pre-Class Prep

      Boil the potatoes in lightly salted water until they become soft
