The "ncannulate sagne", also called "torte" in some areas of the lower Salento, are a homemade pasta in the shape of a long twisted smear, made with a delicate and precise hand movement, probably created for the first time by the ancient Apulian pasta makers. They are the classic “ Sunday dish ” and, together with the orecchiette, the most famous pasta format in Salento. It is said that the “ sagne " ( rolled lasagna ) were born to pay homage to St. Joseph, as suggested by the shape reminiscent of the wood chips of the carpenters' shops.

Class Description and Details
In this 1.5-hour experience, you’ll join us in the small town of Palombara Sabina. Nonna will invite you into her home, and we’ll share family traditions, stories, and create a delicious meal together using a recipe passed down through generations. See below for our favorite wine pairing suggestion, should you be so inclined! Every class provides a meal to a child in need. One Class, One Meal.

Ingredients for 2 people
250g flour
100g sugar
125g margarine
1 egg
1 pinch of salt
8g of baking powder
½ kg ricotta cheese
600 ml milk
2 teaspoons of sugar
1 bag of vanillin/vanilla sugar
1 orange peel
cinnamon
millefiori water
250gr sugar
3 eggs
1 jar of cooked wheat
Alternatives in case you can’t find cooked wheat:
150g of carnaroli rice
250ml of water
400ml milk
cinnamon powder
80g brown sugar
10ml extra virgin olive oil or 20g of butter
