Cavatelli alla Nerano is a great vegetarian, spring dish. To make Nerano sauce you’ll need zucchini and “Provolone del Monaco” cheese. Why do we call it like this? In the past, farmers from the countryside reached Naples to sell their savory cheese. Being poor they were just dressed in heavy capes, so they were commonly called “Monks”. That’s why this wonderful cheese is known as “Provolone del Monaco”, Monk’s cheese.

      Class Description and Details

      In this 1.5-hour experience, you’ll join us in the small town of Palombara Sabina. Nonna will invite you into her home, and we’ll share family traditions, stories, and create a delicious meal together using a recipe passed down through generations. See below for our favorite wine pairing suggestion, should you be so inclined! Every class provides a meal to a child in need. One Class, One Meal.

      Ingredients and Utensils

      Ingredients (2 people): 
      • 1 cup (200 g) of semolina flour 
      • 1/2 cup of water 

      • 250g zucchini / 5 small zucchini
      • 1/2 cup (100g) provolone del Monaco or pecorino romano 
      • 3 tbsp almonds 
      • 5-6 fresh basil leaves 
      • 1 garlic clove 
      • Grated parmigiano reggiano to taste 
      • Black pepper to taste 
      • Extra-virgin olive oil 
      • Coarse salt
      • Fine salt

      Utensils: 
      • 1 large wooden cutting board (or a clean countertop or table) 
      • 1 large cutting knife or a bread knife with a smooth edge 
      • 1 cutting board 
      • 1 large pan 
      • 1 big pot 
      • 1 medium bowl 
      • 1 strainer 
      • 1 wooden spoon

      Pre-Class Prep

      Pick the basil leaves, grate the Provolone, and chop the almonds.

      Suggested Wine Pairing

      Verdicchio would be a great pairing!
