On the Menu: Scarpinocc

 

Scarpinocc are a traditional stuffed pasta from the Bergamo area in northern Italy. Unlike many other stuffed pastas, such as meat-filled ravioli, their filling is made with breadcrumbs, cheese, butter, and herbs.

Ingredients:

For the pasta dough

  • 300 g (2½ cups) 8612 Petra flour
  • 3 eggs
  • A pinch of salt

For the filling

  • 150 g (1½ cups) breadcrumbs
  • 100 g (1 cup) grated Grana Padano or Parmesan cheese
  • 50 g (3½ tbsp) melted butter
  • 1 egg
  • 1 garlic clove, finely minced (optional)
  • Fresh parsley, finely chopped
  • A pinch of nutmeg
  • Salt and black pepper, to taste
  • A little broth or milk, if needed, to soften the mixture

For the sauce

  • 80 g (5½ tbsp) butter
  • Fresh sage leaves
  • Grated Grana Padano or Parmesan cheese, for serving
