  • 150 ml room temperature water
  • 125 g of ground veal
  • 125 g of ground pork
  • 1 carrot
  • 1 stalk of celery
  • 100 g of peas
  • 750 ml of tomato sauce
  • 75 g of tomato paste
  • 1/2 glass of red wine
  • 0.5 onion
  • 1 clove of garlic
  • 2 basil leaves
  • 125 g of toma cheese (or a goat cheese)
  • 35 g of grated caciocavallo cheese (or parmigiano)
  • Breadcrumbs, as needed
  • 0.5 teaspoon of sugar
  • Pinch of nutmeg
  • Extra virgin olive oil (EVO)
  • Thin Salt
  • Coarse Salt
