For the chestnut pasta dough:

100 g chestnut flour
100g Petra 7220 flour (or another high-quality Italian flour)
1 tablespoon extra virgin olive oil
2 medium eggs

For the filling:

250 g ricotta cheese
100 g black kale (cavolo nero), cooked and well squeezed
Salt, to taste
Freshly ground black pepper, to taste

To serve:

2 tablespoons butter
Fresh thyme
Pecorino cheese, grated
