Ingredients and Utensils

Ingredients: 
  • 2 eggs
  • 200 g of Petra Chef Flour for pasta fresca
  • 6 medium artichokes
  • 1 clove of garlic
  • 100 g (3.5 oz) grated Parmesan cheese
  • 150 g (5.3 oz) mozzarella or scamorza, cubed
  • 3 tbsp extra virgin olive oil
  • 100 ml (3.4 fl oz) white wine
  • Salt and pepper to taste
  • 1 lemon (for acidulated water to clean the artichokes)
  • 50 g (1.7 oz) butter
  • 50 g (1.7 oz) all-purpose flour
  • 500 ml (17 fl oz) whole milk
  • A pinch of nutmeg
  • Salt to taste
  • Pre-Class Prep

Tools:

  • Large mixing bowl (for the artichokes)
  • Medium saucepan (for the béchamel)
  • Rolling pin or pasta machine
  • Whisk
  • Knife
  • Cutting board
  • Frying pan
  • Baking dish (approx. 20x30 cm)
