125 g petra flour 7250
125 ml water
25 g lard (or butter if preferred)
About 3 eggs (≈ 250 g)
Pinch of salt


For the ricotta cream

300 g sheep’s milk ricotta (well drained)
75 g powdered sugar
30 g dark chocolate chips


For frying & garnish

Peanut oil (or neutral frying oil)
Candied orange peel
Candied cherries
Chopped pistachios
