The cannelloni are one of the most varied dishes there are, you can make them in all sauces and for all tastes, precisely because it is a very soft and malleable pasta. You will not even need a lot of time to prepare them, because there are many simple and quick recipes to make both the’ dough and the sauce.their paternity is claimed by the Neapolitan tradition. The first prototype of pasta wrapped with all’ottocento inside a filling of minced meat combined with truffles and tomato sauce dates back to the ’800. It was a recipe created by the Neapolitans, with precision by the chef Vincenzo Corrado.

100 gr of Petra 8610 Flour 100gr of Petra 7220 Flour
2 Eggs - Better if organic!
1 cup of ground meat (a mixture of veal, beef and pork would be perfect)
50g of Mortadella (optional) 6 spoons grated Parmigiano Reggiano
1 glass of Milk
1 onion
1 carrot
1 stalk of celery
1 can of Passata (better if San Marzano tomatoes) Extra-virgin olive oil
Fine salt
Coarse salt
2 fresh Mozzarella

Utensils:

Large wood cutting board
Pasta rolling machine (optional)
Big Knife with a flat blade
Fork
1 big pot
1 small pot
1 medium pan
Strainer
Small food processor Wooden spoon
Cutting board
Small baking tray Oven!
