In this step-by-step, pasta class, you will learn how to create delicious Girelle (lasagna rolls) with ricotta and spinach, a tasty and creamy version of baked pasta! A perfect first course for Sundays and special occasions. From preparing the pasta dough, to cook your Girelle, Nonna Renzia and Chiara will be there to guide you at your own pace. This class is perfect for those who can't attend a live classes due to schedule conflicts, or for those who want to slow down, be able to rewind and rewatch, and perfect their technique.


How Does it Work?

1. Upon checkout, you'll receive an email confirmation of your purchase and a prompt to create a login to our class platform called Teachable.  You can access our class on teachable by clicking here. You'll also be sent a list of ingredients and utensils you will need to have for class.

2. You will have 30 days from your time of purchase to log in to the Teachable website and take the course. You may take the course as many times as you'd like, and go back and review any sections.

3. Enjoy your pasta-making experience on-demand, any time that works for you!

Ingredients and Utensils

Ingredients (2 people):

  • 200 gr Petra flour 7220 for fresh pasta
  • 2 eggs
  • 300 gr fresh spinach
  • 250 gr ricotta cheese
  • 50 gr smoked scamorza cheese (or mozzarella)
  • 2 tbsp Parmigiano
  • 100 ml béchamel
  • salt

Utensils:

  • oven
  • low baking pan
  • fork
  • bowl
  • rolling pin
  • knife
  • spoon
  • ladleful
  • film
  • cotton cloth

Pre-Class Prep

Clean and wash the spinach, place them in a large pot with 2 cups of water and cook them for 10 minutes, until the leaves soften up. Finally drain the spinach well, let them cool and then shred with a knife.
