Some say Parma, others Sicily, another Naples but no one has been able to prove it. Despite the mystery, we certainly know how good it is and that grandmas are great at cooking it. What makes everyone agree is its flavor and texture, when it arrives on the table you can't say no!

      Class Description and Details

      In this 1.5-hour experience, you’ll join us in the small town of Palombara Sabina. Nonna will invite you into her home, and we’ll share family traditions, stories, and create a delicious meal together using a recipe passed down through generations. See below for our favorite wine pairing suggestion, should you be so inclined! Every class provides a meal to a child in need. One Class, One Meal.

      Ingredients and Utensils

      Ingredients (2 people): 
      • 4 medium eggplants
      • 1 stalk of celery
      • 1 carrot
      • ½ onion
      • 5-6 basil leaves
      • 700g passata or whole peeled tomatoes
      • 300g mozzarella
      • 150g parmigiano
      • 1L sunflower oil

      Utensils: 
      • 1 chopping board
      • 1 medium pot
      • 1 large pan
      • 1 fork
      • 1 grater
      • 1 big tray
      • 1 skimmer
      • 1 baking Pan (30cmx30cm)
      • 1 paper towel
      • 1 big flat blade knife
      • 1 small food processor

      Pre-Class Prep

      Dice celery, carrot and onion (the smaller the better)

      Suggested Wine Pairing

      Vermentino would be a great pairing!

      2. On the day of your class you'll receive a calendar invitation in your email with a Zoom link, about 50 minutes before the class starts. Make sure to do your pre-class prep before class starts!
