In this class, we will teach you how to make the ultimate Italian pasta: carbonara! This is a regional dish that makes you feel as if you’re walking in Rome and eating in a Trattoria on a sunny day. The creamy sauce and the fresh-made pasta will make Carbonara an instant favorite!

Ingredients and Utensils
Ingredients (2 People):
- 1 ½ cups or 250g of "00” grade flour, or Semolina flour
- 100g of warm water
- 3 eggs (organic preferred)
- 1 tablespoon extra virgin olive oil
- 200g aged pork cheek or aged pork belly (1 zucchini for the vegetarian option as a replacement)
- 150g grated Parmigiano Reggiano cheese
- 150g grated Pecorino Romano cheese
- Fine salt
- Coarse salt
- Black pepper
- 1 large wooden cutting board (or a clean countertop or table)
- 1 large cutting knife or a bread knife with a smooth edge
- 1 fork
- 1 large pot
- 1 medium pot
- 1 strainer
- 1 wooden spoon
- Natural fiber cloth to dry the pasta
