In this class, we will teach you how to make the ultimate Italian pasta: carbonara! This is a regional dish that makes you feel as if you’re walking in Rome and eating in a Trattoria on a sunny day. The creamy sauce and the fresh-made pasta will make Carbonara an instant favorite!

Class Description and Details

In this 1.5-hour experience, you’ll join us in Palombara Sabina — a small town outside of Rome. We’ll share family traditions, stories, and create a delicious meal together using recipes passed down through generations.  See below for our favorite wine pairing suggestion, should you be so inclined!  Every class provides a meal to a child in need. One Class, One Meal.

Ingredients and Utensils

Ingredients (2 People):

  • 1  ½ cups or 250g of "00” grade flour, or Semolina flour 
  • 100g of warm water 
  • 3 eggs (organic preferred)
  • 1 tablespoon extra virgin olive oil
  • 200g aged pork cheek or aged pork belly (1 zucchini for the vegetarian option as a replacement)
  • 150g grated Parmigiano Reggiano cheese
  • 150g grated Pecorino Romano cheese
  • Fine salt
  • Coarse salt
  • Black pepper
Utensils:
  • 1 large wooden cutting board (or a clean countertop or table)
  • 1 large cutting knife or a bread knife with a smooth edge
  • 1 fork
  • 1 large pot
  • 1 medium pot
  • 1 strainer
  • 1 wooden spoon
  • Natural fiber cloth to dry the pasta
