Pumpkin Gnocchi is back! The fan favorite has been modified with a twist - cacio e pepe. The pumpkin sweetness is the perfect match for salty pecorino and spicy pepper. This dish is savoury and sweet at the same time. It's perfect for fall!

Class Description and Details

In this 1.5-hour experience, you’ll join us in the small town of Palombara Sabina, Italy. Nonna will invite you into her home, and we’ll share family traditions, stories, and create a delicious meal together using a recipe passed down through generations.  See below for our favorite wine pairing suggestion, should you be so inclined!

Every class provides a meal to a child in need. One Class, One Meal.

Ingredients and Utensils

Ingredients (2 People):

  • 1 medium potato
  • 1 cup / 200 gr of fresh pumpkin (the least watery you can find) or canned pumpkin
  • 1.5 cup (300 gr) of “00" flour, or regular flour
  • 1 egg
  • Salt
  • Extra-virgin olive oil
  • 2 cups of grated Pecorino cheese (use Parmiggiano as replacement)
  • Black pepper
  • Coarse salt
Utensils:
  • 1 large wooden cutting board (or a clean countertop or table)
  • 1 large cutting knife or a bread knife with a smooth edge
  • 1 fork, or a potato masher, or a ricer
  • 1 big pot
  • 1 big bowl
  • 1 medium bowl
  • 1 strainer
  • 1 wooden spoon

Pre-Class Prep

Boil the whole potato in boiling water without peeling it for about 30 minutes (you can check if it’s ready by pinching it with a fork). Cook the fresh pumpkin in the oven for about 40 minutes, until it becomes really soft.
