Prep Before the Class

  • Cook and blend 100 g of pumpkin until smooth (this will be used for the pasta dough)

Ingredients

  • 200 g Petra 7220 flour

  • 100 g cooked and pureed pumpkin (for the dough)

  • 100 g raw pumpkin, finely chopped

  • 3 sausages

  • 125 g provola cheese, diced or shredded

  • 250 ml béchamel sauce

  • Parmesan cheese, to taste

  • Extra virgin olive oil (EVOO)

  • Fine salt

  • White wine (optional)
