On the Menu: Orecchiette with Cime di Rapa

Orecchiette with Cime di Rapa (broccolini) are from Puglia, the heel of Italian Peninsula. They’re typically from Bari, where generations of women make them by hand (no pasta machine allowed!) with semolina flour and water. Broccolini - the green, tasteful upper part of broccoli - are a bit sour: they spouse the sweetness of the pasta majestically.
