On the Menu: Passatelli with Mushrooms

Passatelli are typically from Marche, the Adriatic region in Eastern Italy. Passatelli are so simple, and yet so tasteful. Every mouthful is a magic mixture of freshness -  given by lemons - and sweetness - given by Parmigiano cheese. They’re perfect with many types of different sauces. They were born in the XIX century, generations and generations of women passed down this recipe to today.

Class Description and Details

In this 1.5-hour experience, you’ll join us in Corinaldo — a small medieval village in the Marche hills. Nonna Firoella will invite you into her home and together we’ll share family traditions, stories, and create a delicious meal together using a recipe passed down through generations.  See below for our favorite wine pairing suggestion, should you be so inclined!  Every class provides a meal to a child in need. One Class, One Meal.

Ingredients and Utensils

Ingredients (2 People):

  • 2 eggs (organic preferred)
  • 1 cup of breadcrumbs
  • 1 cup grated Parmigiano Reggiano to taste
  • ½ grated organic lemon rind
  • ½ clove garlic
  • 2 cups mixed mushrooms
  • 2 tbsp butter
  • 2 pork sausages
  • Pinch of nutmeg
  • Salt
  • Extra virgin olive oil
Utensils:
  • 1 large wooden cutting board (or a clean countertop or table)
  • 1 large cutting knife or a bread knife with a smooth edge
  • 1 fork
  • 1 large pot
  • 1 medium deep pan
  • 1 potato masher (alternative use a pastry bag and cut the point with a diameter of 1 cm)
  • 1 strainer
  • 1 wooden spoon
