Maccheroni alla chitarra are part of the rich gastronomic tradition of the Italian region Abruzzo. The specific squared shape is obtained thanks to an actual Pasta Guitar! With the meatballs on top and a rich tomato sauce, Maccheroni alla chitarra are so savory. It's not uncommon that every Sunday morning the family will gather to make the “pallotte”, meatballs, for the sauce.

Class Description and Details

In this 1.5-hour experience, you’ll join us in Abruzzo — the region famous for this pasta — and you'll be invited into Nonna Rita's home. We’ll share family traditions, stories, and create a delicious meal together using a recipe passed down through generations.  See below for our favorite wine pairing suggestion, should you be so inclined!  Every class provides a meal to a child in need. One Class, One Meal.

Ingredients and Utensils

Ingredients (2 People):

  • 2 cups of passata
  • 1 cup or 200g of "00" grade flour, or all-purpose flour
  • 3 eggs (organic preferred)
  • 1 carrot
  • 1 onion
  • 1 stalk of celery
  • 1 glass of white wine
  • ½ cups of ground beef
  • 5 tbsp of Parmigiano Reggiano
  • Extra virgin olive oil
  • Pinch of nutmeg
  • Fine sea salt
  • Black pepper

Utensils:
  • 1 large wooden cutting board (or a clean countertop or table)
  • 1 large cutting knife or a bread knife with a smooth edge
  • “Chitarra” machine (optional)
  • 1 rolling pin
  • 1 fork
  • 2 large pots
  • 1 medium bowl
  • 1 large tray
  • 1 large pan
  • 1 strainer
  • 1 wooden spoon
  • 1 grater

Pre-Class Prep

Peel your fourth of an onion and the carrot. Cut the onion, carrot, and celery into small pieces and blend them in a food processor. We need tiny pieces of our “odori” (vegetables). Grate the Parmigiano Reggiano.
